EASY Poppyseed Chicken

I love a recipe that only has 6 ingredients -- that's my kind of dinner!!

3-4 chicken breasts (I use organic/free range)
1 can cream of chicken
1/2 carton of sour cream (I use fat free)
1 stick of melted butter
1 sleeve of Ritz crackers

Heat oven to 350.  Boil chicken and shred.  Combine sour cream and cream of chicken -- once combined add shredded chicken to mixture.  Spray the bottom of your dish with cooking spray and sprinkle 3/4 the crumbled crackers on the bottom.  Pour the chicken mixture on top and then sprinkle remaining crackers.  Pour the melted butter on the top of the dish, sprinkling poppyseeds at the end and pop into oven.

Bake for 30-35 minutes and serve over brown rice.
