I always buy tomatoes in the summertime...which means I often realize I have an unopened container of grape tomatoes that I need to devour before they go bad.
Gina with Skinnytaste recently shared this recipe for her Garden Tomato Sauce - a quick and easy way to use those tomatoes in a delicious and low-calorie way. A major recipe selling point for me is few ingredients -- the fewer the better!! I served this sauce over pasta but I can imagine it tastes just as good over chicken.
1 tbsp olive oil
6 cloves garlic
1.5 lb grape tomatoes, cut in half
salt and fresh pepper
2 tbsp fresh chopped oregano (or fresh basil...I used fresh oregano and basil seasoning)
1/8 tsp crushed red pepper
Warm the olive oil and garlic over the stove until the garlic begins to brown.
Add the tomatoes, salt, pepper and red pepper to the pan and reduce the heat to low. Let the tomatoes simmer for 15 minutes.
Then add the fresh oregano (and basil if you like) and let it cook for another 15 minutes.
And that's it!! Sprinkled with parmesan cheese and served warm with a caesar salad, I can imagine this dish tastes just as good cold.
Super easy and very tasty....so much so that I might need to buy extra tomatoes at the grocery next time.
